# Let's Celebrate St Patrick's Day With Two Irish Whiskey Cocktails From Glendalough Distillery *By James Hills — Updated March 2024* Irish Whiskey has experienced somewhat of a renaissance in recent years and while it is undeniably linked to St Patrick's Day celebrations across America, the reality is that Irish whiskey distillers are working hard to innovate and change the perception of their craft as simply a seasonal libation. We are particularly impressed with the aging process delivered by Glendalough Double Barrel since it takes a classic Irish whiskey but then let's it age in American oak Bourbon barrels and finish in Spanish oak Oloroso Sherry barrels for that ultimate sense of refinement that defines this unique expression of Ireland's treasured spirit. Today, we're toasting to tradition with a spotlight on Glendalough Double Barrel, an exquisite single grain whiskey that commands global acclaim. This Irish gem undergoes a dual maturation process, initially resting in American oak Bourbon barrels, then transitioning to Spanish oak Oloroso Sherry barrels, infusing it with unparalleled depth and complexity. Born from a deep-rooted passion for crafting extraordinary spirits, [Glendalough Whiskey](https://us.glendaloughdistillery.com/) is the embodiment of quality, designed to elevate the moments that matter most. At the heart of Glendalough Distillery's ethos is a desire to bring people together, celebrating Irish heritage through the shared enjoyment of their meticulously crafted whiskey. ### Virgin Voyages' Brilliant Lady: Why This Isn't Your Grandfather's Cruise Ship Virgin Voyages' Brilliant Lady redefines cruising: 7 exclusive shows, Spanish dining, Alaska access.
