# Review of Alto Canto High Proof Tequila

*By James Hills — Updated January 2025*

As a fellow spirits explorer, I couldn't be more excited to tell you about Alto Canto Tequila - it's like taking a journey to the misty peaks of Mexico's Sierra del Tigre mountains right from your home bar. When I first discovered this gem, I was instantly captivated by how they craft their tequila at one of Mexico's highest distilleries. Every sip transports me to those mountain slopes where organic agave plants grow under pristine conditions.

As a high-proof, aka "still-proof" tequila, it sits in a relatively rare spot that folks who enjoy high-proof whiskies can appreciate. While most casual fans of spirits don't know or don't care, most spirits are watered down to produce an industry-standard 80-proof. This isn't the time to debate the merits of that but for folks like myself that enjoy a more pure expression of the distilate, high-proof spirits like this are much preferred and appreciated. Simply put, it allows me to add ice, water, or other liquids together with it to bring the overall product to whatever might be my preferred level.

As the tequila market continues to mature and attract a similar level of appreciation that whiskey has in the United States and Europe, I'm sure products like this will continue to help the market evolve.

Beyond this, what really speaks to my collector's soul is how Alto Canto blends time-honored traditions with sustainable practices. It's not just another bottle on my shelf - it's a story of Mexican craftsmanship and a highlands terroir captured in glass. The distinctive smoothness and unique flavor profile remind me why I fell in love with collecting spirits in the first place. Each pour is like opening a window to those distant mountain ranges, letting me experience a piece of Mexico's rich tequila heritage without leaving my tasting room.

## Distilled High In The Sierra del Tigre Mountains

Perched high in Mexico's Sierra del Tigre mountains at a staggering 9,000 feet, Alto Canto Tequila stands out as a unique spirit that's redefining what premium tequila can be. The high-altitude location isn't just for show - it fundamentally changes how this tequila is made. At this elevation, alcohol evaporates at a lower temperature during distillation, resulting in an exceptionally smooth spirit that'll make you rethink everything you know about tequila.

You'll find Alto Canto's production process reads like a love letter to traditional tequila-making methods. Their organic agaves spend a full 72 hours cooking in brick ovens, while a massive volcanic rock wheel, called a tahona, carefully crushes the cooked plants to preserve their precious fibers. The reposado expression requires 2 months to age in oak barrels before bottling. The brand's commitment to sustainability shows in their local tree planting initiatives that enhance biodiversity and reflect their dedication to sustainable practices.

The fermentation process is where things get interesting - they let nature take the wheel with an 80-hour wild malolactic fermentation in wooden tanks, creating unexpected notes of buttered popcorn and freshly baked bread. While we've talked about this process of making buttery "California Chardonnay" I've never actually seen it applied to tequila production. However, I do appreciate it's uniqueness but it makes for a distinct flavor.

## Alto Canto Expressions:

- **Blanco**: This unaged tequila is noted for its cooked agave flavor with hints of vanilla, caramel, butter, and moist soil.

- **High-Proof Blanco (Still Strength)**: Bottled at a higher proof, this expression retains a smooth cooked agave flavor, complemented by notes of pepper, citrus, minerals, and moist soil.

- **Reposado**: Aged between two months and just under a year, the reposado presents flavors of cooked agave, wood, dried fruits, nuts, vanilla, and moist soil.

## Tasting Notes:

### Alto Canto Blanco

Bright aromas of cooked agave, vanilla, and citrus with a hint of wet stone minerality. The palate is smooth and slightly buttery, with sweet agave, white pepper, and herbal notes. A medium-length finish lingers with pepper spice and earthy undertones.

### Alto Canto Still Strength Blanco

Intense cooked agave and mineral-driven aromas with black pepper, green herbs, and citrus. Bold and full-bodied, it delivers bright citrus zest, strong pepper, and honeyed sweetness with a dry, slightly tart note. The long, warm finish showcases lingering spice and complex earthiness.

### Alto Canto Reposado

Rich aromas of roasted agave, dried fruit, vanilla, and toasted oak. The palate is smooth and well-balanced, featuring caramelized sugar, baking spices, and hints of almond and butterscotch. A medium-long finish leaves behind warm spice, subtle oak, and earthy minerality.

Whether you're a tequila enthusiast or just someone who appreciates craftsmanship, you'll find something to love in Alto Canto's distinctive character. It's proof that sometimes the best innovations come from combining time-honored traditions with the perfect location - even if that location happens to be higher than any other tequila distillery in Mexico.
